The thermal and overall efficiencies of jaggery making plants are very low due to loss of thermal energy through flue gasses and undesigned constructional parameters of plant. The storage of jaggery is also a major problem. Since, it is much influenced by the contents of invert sugars and mineral salts that are hygroscopic in nature.
However, due to thermal energy loss with flue gases and an unscientific approach in plant construction, jaggery plants have a poor thermal efficiency of less than 25%, poor emission characteristics, and a high bagasse consumption rate. Advanced jaggerymaking techniques use solar energy and heat pumps for jaggery production.
